The story of OIRZ began in 2020 with the desire to generate a virtuous supply chain for the production of zero-residue soft wheat flour, in order to protect the consumer and the territory.
Being the green heart of Italy, the green hills of Umbria are the perfect place to develop this project.
Our supply chain starts from the seed, the first step of a path that leads to your tables.
From the sowing to the soil cultivation, from the harvesting to the storage, up to the production and packaging of the flours. A guaranteed, genuine, sustainable, and completely transparent process.
Suitable soils, free from sources of external pollution, are selected and then identified by name.
The soils are processed with the least possible environmental impact, thus trying to reduce Co2 emissions.
CULTURAL ROTATION
To preserve soil fertility and field health, crops are switched every 5 years for a minimum of 3 different crops.
Artisanal", non-productive sowing. On our soils we guarantee an even distribution of seeds to ensure the field and crops are healthy.
After a meticulous quality control of the raw material, we store the wheat separately to avoid contamination. We do not use plant protection products; the wheat is ground pure.

In order to guarantee the traceability of the product, a field logbook is drawn up - in both paper and digital versions - in which all the steps are recorded from sowing to harvesting, a true identity card for the product.
In this way we can control and guarantee every step of processing to obtain a superior quality product.
From this path was created OIRZ, the 100% Italian soft wheat grain with zero residue.
